Chicken Fried Chicken

You may be wondering what makes chicken fried chicken different than fried chicken.  I have no clue!  I took chicken.  I breaded it.  I fried it.  It looks like regular fried chicken.  The only difference is the title.  Someone on Allrecipes.com must have been nipping the bottle while naming it!  Whatever the difference, this chicken's good!  It's crunchy on the outside, soft, tender and juicy on the inside.  Just about perfection if you ask me!  Have a great holiday weekend.  Enjoy  :)

CHICKEN FRIED CHICKEN
30 saltine crackers

2 tablespoons all-purpose flour
2 tablespoons dry potato flakes
1 teaspoon seasoned salt
1/2 teaspoon ground black pepper
1 egg
1/4 cup vegetable oil
6 skinless, boneless chicken breast halves

Place crackers in a large resealable plastic bag; seal bag and crush crackers until they are coarse crumbs. Add flour, potato flakes, seasoned salt, and pepper to bag and mix well. Beat egg in a shallow dish or bowl; heat oil in a large skillet over medium high heat. One by one, dredge chicken pieces in egg beat, then place in bag with crumb mixture, seal bag and shake to coat. Reduce heat to medium and cook coated chicken in skillet for 15 to 20 minutes, turning frequently, until golden brown and juices run clear.

LMAO! Good point. I understand chicken fried steak but yeah, "chicken fried chicken" I don't get.

Chicken fried chicken is chicken breast that have been pounded and thinned and then coated the same way as chicken fried steak (flour plus egg batter) and fried. If you live in the Texas, you can find this for sure, esp. Southern Texas. I have made both.
I will have to screw up the courage to make this sometime! Do many people make homemade fried chicken anymore? My grandmother was from Kentucky and made fried chicken for a lot of birthday dinners for my uncle. I watched her make it more than once but for some reason it seems really intimidating, I think because I'm afraid the coating will burn before the chicken is cooked through.

I just found your blog, but the second person is correct. Chicken from chicken is chicken that is prepared like a chicken fried steak. I'm from Oklahoma and LOVE a good chicken fried chicken with plenty of cream gravy.
