It's warming up outside, so here's a yummy one that doesn't heat up the kitchen! The pork's tender, juicy and flavorful and the leftovers would make a great pulled pork sandwich. Enjoy :)
SLOWER COOKER PORK CARNITA TACOS
2 to 2 ½ lbs pork shoulder or Boston butt roast, cut into 5 or 6 small pieces
1-2 teaspoons dried oregano
2 teaspoons black pepper
1 teaspoon salt
½ teaspoon ground cumin
1 onion, cut into chunks
3 garlic cloves, whole
Tomatillo salsa (or any salsa you like)
Corn or Flour tortillas
1 avocado, sliced
Mix together oregano, pepper, salt, and cumin and rub on outside of pork pieces in bottom of slow cooker.
Throw onion and garlic on top of pork.
Slow cook on low for 6 – 8 hours or until meat is falling apart.
When finished discard the onion and garlic. Drain meat and shred with a fork.
Serve warm with tortillas, salsa, avocados and cilantro.
I'm a previous stay-at-home mom of 8 years who joined the working world again as the Food Service Director over our local school district and a high school lunch lady. I have 3 kiddies. Makayla (Miss Picky Pants) is 14, Sophie (Worm) is 13 and Chase's 9. I LOVE to cook! If you're looking for plain ol' mom food... you're in the right place! I'm always looking to cook up new recipes and simple, inexpensive meals. My goal's to share old favorites and to make new ones. Thanks to everyone who stops by and visits my blog!
