Peach Crisp
Filling
4 cups fresh peaches, peeled and sliced
2-4 TBSP sugar (2 for sweeter peaches, 4 for tart peaches)
1 TBSP cornstarch or flour
1/2 TBSP lemon juice
Crumble topping
3/4 cup oatmeal
3/4 cup flour
1/2 cup brown sugar
1/3 cup sugar
8 TBSP cold butter or plant based spread
Preheat oven to 350 degrees F.
To make filling, mix peaches, sugar, cornstarch and lemon juice in a greased 9×9 baking pan.
In a small bowl, mix oatmeal, flour, brown sugar and sugar. Cut in butter with a fork until combined and crumbly. Sprinkle crumble topping over peaches.
Bake 20-30 minutes, or until golden brown.
