Oh My Goodness!!! This is hands-down the best meal we've had in a long time. It's outstanding. You MUST try this! I found the original recipe in the newest edition of the Kraft Food & Family magazine, but made a few changes. It was misnamed sweet-and-sour meatball skewers. Yes, it does have a little sweetness to it, but not sour. I think that name leads you to believe it to have an Asian taste, but it absolutely doesn't. It tastes like wonderful, smokey barbecue with just the right amount of sweetness given by the apricot preserves. The frozen meatballs make it a cinch to make. The hardest part is cutting the onion and pepper... and that's just so hard :P My kids loved this. I have redeemed my new-recipe-trying-self with my husband. I think I could eat this every meal. My husband did the sweetest thing at the dinner table. The last skewer was setting on the plate. We were both eyeing it. I was ready to stab him with my fork if he touched it when he asked if I wanted to split it. I didn't really want to split it, but I guess half was better than none :) I'm not ashamed to admit I'm a humongous pig! You need to add these to your grocery list immediately. Enjoy... we did :)
I had to share this picture with you of Chase. Is that not the goofiest, I'm in love with my tractor face ever? He would be content riding his tractor all day long doing his "farm work".
BARBECUED MEATBALL SKEWERS
32 frozen fully cooked 1-inch meatballs (I always use the Farm Rich brand), thawed
1 large green pepper, cut into 1-inch squares
1 onion cut into large enough chunks to be able to easily thread onto the skewers
1/2 cup apricot preserves
1/2 cup barbecue sauce (I used cattleman's)
Preheat grill to medium-high heat. Thread meatballs, peppers and onions alternately onto 8 skewers. Microwave preserves in a small bowl for 15 seconds. Stir in barbecue sauce and brush 1/2 of the mixture onto the kabobs. Grill 8 to 10 minutes or until meatballs are heated through and have a nice color; turn occasionally and brush with remaining preserves mixture the last 2 minutes.
