temporarily forgot about it. The last time I made it I ate the leftovers every meal for days (it's good what can I say!) and burnt myself out for a while. Well, that stage didn't last long because this week I was hungry for it again! I've used several taco soup recipes, but this
Duggar Family version is the one I keep coming back to. I love this with crushed up tortilla chips, sour cream, cheese and even black olives and a little lettuce. Enjoy :)
DUGGAR FAMILY TACO SOUP
1 lb ground beef or turkey
1 onion, chopped
1 (4oz.) cans green chilies, chopped
1 tsp. salt
1/2 tsp. pepper
1 pkg. taco seasoning
1 pkg. ranch or 1/3 c. liquid ranch dressing
1 cans hominy (or corn),
undrained3 (14 1/2 oz.) cans diced tomatoes,
undrained1 (15oz.) cans kidney beans,
undrained2 (15oz.) cans pinto beans,
undrained1 3/4 c. water
Brown ground meat with onion. Stir in remaining ingredients. Bring to boil. Simmer 30 min. Serve w/ Tortilla chips, grated cheese & sour cream.

You'll never believe what I did!!! Can you say d-u-m-b? My kids have been in serious withdrawls because they are missing their favorite show of all time - 18 Kids and Counting! Hello... I knew they had the baby but it didn't dawn on me that the show name had already changed to 19 Kids and Counting!!! I've been wondering why my Tivo wasn't recording them anymore!!! DUUHHHHH!!! Well, I hope I gave you a good laugh for today!!! ;O)
This is the amount of soup I made for our family of 5. I had some left for lunch the next day and enough to freeze a few portions for later. I would think it would work good for a family of 6. This was a cut version of the duggars recipe.
