I love browsing through blogs seeing what recipes other people are fixing and enjoying. I spend way to much time doing this, but I've found some really great blogs with food I can't wait to try. Last week I came across a great blog Gather Round Our Table and printed a huge stack of recipes. Frito Fiesta Salad sounded right up our alley. Boy, I'm glad I tried this one. It's excellent! You can even use the leftover meat sauce to make a completely different meal. Warm it in a skillet with cooked ice. Sprinkle with cheese and continue heating until the cheese is melted. Including chips, this great meal comes in under $1.50 per serving. I can't wait to make this one again!
FRITO FIESTA SALAD
1 lb. hamburger
1 small onion, chopped
1 pkg. taco seasoning
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can corn, drained
1 (15 oz) can diced tomato
1 (8 oz) can tomato sauce
Frito corn chips
lettuce, grated cheese, olives, avocado, ranch dressing, sour cream, salsa

Brown and drain hamburger with onion. Add package of taco seasoning and cook according to package directions. Add beans, corn, diced tomato and tomato sauce. Simmer for 30 minutes. Assemble like a taco salad using Frito corn chips on bottom and topping with meat sauce and toppings of choice (lettuce, grated cheese, olives, avocado, ranch dressing, sour cream, salsa, etc.) 6 servings
