Lentil Stew

I spotted this recipe a few weeks ago on Kara's Kitchen Creations. I'd never tried lentils before and was curious. Lentil are both inexpensive and healthy, so I thought I would give this recipe a try. I knew my husband wouldn't eat this, so I made it for my lunch today. Lentils have a green tint (kind of) and the peppers are green, so this was my festive St. Patrick's Day food! I will admit to being pleasantly surprised. This stew is VERY filling and inexpensive coming in at under 50 cents per serving. My mom tried this stew and also liked it. My neighbor came to my door and asked what smelled so good. If you've never tried lentils before I think you would enjoy this hearty stew.

LENTIL STEW
1 pound bag lentils
7 cups water
1 onion, chopped
3-4 potatoes, chopped
2 chicken bouillon cubes
3 carrots, sliced
4 cloves garlic, minced
squirt of mustard
1 1/2 tsp cumin
2 green peppers, chopped
1 8oz can tomato sauce
1 pound sausage, browned
1/4 cup vinegar
2 Tbsp ketchup
2 tsp sugar
Salt, pepper, and garlic powder to taste


Boil lentils in water 10 minutes. Drain. Add 7 cups water and boil 10 minutes with onion. Add rest of ingredients and cook till lentils are tender and veggies are done.

I love lentil soup, its one of my favorites!! Like you said inexpensive and healthy. Tasted darned good too!
