Tomorrow is grocery day... YAY!! I scavaged through the deep freeze today and found 1 pound of ground beef. We haven't had meat loaf in a while, so I thought it sounded good. Unfortunately I didn't have the stuff to make my normal meat loaf, so I hunted for a recipe I had all the ingredients for. This is the first one I found, so it was the winner. This meat loaf is sweeter than any other meatloaf I have made, but very good. I think the sweetness made the kids like it even more. It totalled under $1.00 per serving making it a steal.
SWEET BARBECUE MEAT LOAF
SAUCE
1 can (8 ounces) tomato sauce
1/2 cup Dark Brown Sugar
1/4 cup vinegar
1 teaspoon ground mustard
MEAT LOAF:
1 pound lean ground beef
1 egg, beaten
1/2 cup quick-cooking or rolled oats
1/2 medium onion, chopped
1/2 medium green pepper, chopped
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon poultry seasoning
1/2 teaspoon dried parsley flakes
In a small bowl, combine sauce ingredients; set aside. In a large bowl, mix together meat loaf ingredients. Add 1/4 of the sauce to the meat loaf mixture; mix well. Press into a 9-in. x 5-in. loaf pan. Bake at 350° for 1 hour. Remove from oven; drain. Pour remaining sauce over loaf. Return to oven and bake 20 minutes longer or until no pink remains. 4-6 servings

Thanks for visiting my blog. I stopped by to check yours out and just wanted to let you know your recipes all sound so delicious!! I'm just about ready to bite my arm off over here. LOL I can't wait to try out the Duggar family rolls. There show is fantastic --can't wait to get their 20 and counting book.
