Sweet Barbecue Meat Loaf

Tomorrow is grocery day... YAY!! I scavaged through the deep freeze today and found 1 pound of ground beef. We haven't had meat loaf in a while, so I thought it sounded good. Unfortunately I didn't have the stuff to make my normal meat loaf, so I hunted for a recipe I had all the ingredients for. This is the first one I found, so it was the winner. This meat loaf is sweeter than any other meatloaf I have made, but very good. I think the sweetness made the kids like it even more. It totalled under $1.00 per serving making it a steal.

SWEET BARBECUE MEAT LOAF

SAUCE
1 can (8 ounces) tomato sauce
1/2 cup Dark Brown Sugar
1/4 cup vinegar
1 teaspoon ground mustard

MEAT LOAF:
1 pound lean ground beef
1 egg, beaten
1/2 cup quick-cooking or rolled oats
1/2 medium onion, chopped
1/2 medium green pepper, chopped
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon poultry seasoning
1/2 teaspoon dried parsley flakes

In a small bowl, combine sauce ingredients; set aside. In a large bowl, mix together meat loaf ingredients. Add 1/4 of the sauce to the meat loaf mixture; mix well. Press into a 9-in. x 5-in. loaf pan. Bake at 350° for 1 hour. Remove from oven; drain. Pour remaining sauce over loaf. Return to oven and bake 20 minutes longer or until no pink remains. 4-6 servings

I normally refuse to eat any meatloaf other than my Mom's, but this looks really good! I like the fact that it's "sweet"--I think that will encourage my son to eat it!
