Brown Bag Burritos

The candy has been put away (thank goodness!). The kids are acting crazy (I didn't put the candy away soon enough). But all-in-all I think our Easter was great. No one got hurt or stuck anything up their nose and we had a great time eating Easter dinner with my Grandma. Yes, I did remember my camera... so you guys are in for a treat! Keep tuned-in for some really great family recipes! I'm sure some of my family members thought I was crazy for snapping pictures of the food. Oh well, I'm sure they thought I was crazy already :) Grandma baked a honey-glazed ham, so I didn't want pork for supper. Brad picked these burritos off the menu. I feel really bad because I found this recipe on a blog and didn't write down the name on the recipe card. I should be giving someone credit for these awesome burritos. They really are yummy. The spices mixed with the canned enchilada sauce give the meat and beans a great flavor. Brad says they taste like the beef and bean burritos at Taco Bell. They're about 75 cents per serving and very easy. You can't beat that!



BROWN BAG BURRITOS
1 lb. ground beef
1 can refried beans
2/3 c. enchilada sauce
1/4 c. water
1/3 c. minced onion
1/2 TBSP chili powder
1/2 TBSP garlic powder
1/2 tsp salt
1/2 tsp oregano
1 1/2 c. shredded colby/jack
10 flour tortillas


Brown and drain meat. Add all ingredients, but tortillas. Bring to a boil. Reduce heat, cover and simmer 20 minutes. Fill tortillas and roll up. Serve with shredded lettuce, cheese, sour cream and salsa.

I'm gathering Easter candy to be put away. It's amazing how much of it my kids seem to accumulate.

I love burritos! I grew up on them and they are definitely a favorite around our house too! Except for my son, he hates beans. (What's wrong with that boy!)

I'm from Arizona where we have the best Mexican food. This looks FANTASTIC! I love burritos and will certainly try this as soon as I lose all this baby weight. Happy I found this site, I will follow you as I love to cook.
