Poor Mans Sandwich

We made it through a day without anyone getting hurt! WHOO-HOO! It was a good day with a supper to match. We had a lot of fun with these messy sandwiches. I found the original recipe on My New 30, but made some changes. You should have saw the kids faces! They were covered. The meat is tangy and salty, but the bread and toppings balance it out well. They also ring in at under $1.00 per serving. If you're looking for a fun, messy dinner that's inexpensive... you have stopped by the right place! I hope everyone has a great Easter weekend. I have a super-fun Easter recipe to post tomorrow I made with the kids. Also, stay tuned because my 100th post giveaway is quickly approaching!!

POOR MANS SANDWICH
2 TBSP butter, melted
1 loaf French bread
1 pound ground beef
1/4 cup ketchup
2 heaping TBSP pickle relish
2 tsp Dijon mustard
1/4 tsp pepper
1 envelope of Lipton Onion Soup Mix
3/4 cup Beef Stock
Chopped onion, chopped tomato and shredded lettuce, or optional toppings for garnish

Preheat oven to 400 degrees. Brown and drain ground beef. Crumble ground beef well so there aren't big chunks of meat. Add beef stock to ground beef and bring to a boil. Combine the ketchup, relish, mustard and pepper in a small bowl. Add the onion soup mix to the ketchup mixture and stir together well. Add to beef and stir. Reduce heat and simmer 10-15 minutes covered. While that is simmering split French bread long ways. Spread butter on cut sides of bread. Put on a cookie sheet and put in preheated oven. Bake 3 minutes and then flip until it's lightly brown and crunchy. Watch out because it can burn fast! Remove and spread meat mixture over the bottom half of the toasted bread. Top with chopped onion, tomato and shredded lettuce, or other toppings as desired. Top with other half of the toasted French bread and cut into slices.

Hello! Visiting from SITS! Love your header! That sandwich looks like something easy and tasty to make for dinner. I will try it!

I only have to make a Strawberry/Peach Upside-Down Cake. We are going to my husband's parents for dinner.

Have a great Easter!!

Mmmm, this looks wonderful, for the kids...and the BIG kids!
Hey Heidi! Thanks for linking to my recipe!! It really is a great dish isn't it, but yeah, kinda like a sloppy joe in a way. Different flavor but same sloppy LOL! Guess I shoulda called it a 'Sloppy Hamburger Sandwich' huh? I'll be referencing your post about the cost too btw. Anyway, glad you liked it.

I love your blog - got some yummy recipes I see - definitely will try that stuffed shell recipe using meatballs in the near future for sure. We get those meatballs fairly regularly in our Angel Food Ministries boxes.

I'm following you now too!

Have a great Easter weekend!
