We made it through a day without anyone getting hurt! WHOO-HOO! It was a good day with a supper to match. We had a lot of fun with these messy sandwiches. I found the original recipe on My New 30, but made some changes. You should have saw the kids faces! They were covered. The meat is tangy and salty, but the bread and toppings balance it out well. They also ring in at under $1.00 per serving. If you're looking for a fun, messy dinner that's inexpensive... you have stopped by the right place! I hope everyone has a great Easter weekend. POOR MANS SANDWICH
2 TBSP butter, melted
1 loaf French bread
1 pound ground beef
1/4 cup ketchup
2 heaping TBSP pickle relish
2 tsp Dijon mustard
1/4 tsp pepper
1 envelope of Lipton Onion Soup Mix
3/4 cup Beef Stock
Chopped onion, chopped tomato and shredded lettuce, or optional toppings for garnish
Preheat oven to 400 degrees. Brown and drain ground beef. Crumble ground beef well so there aren't big chunks of meat. Add beef stock to ground beef and bring to a boil. Combine the ketchup, relish, mustard and pepper in a small bowl. Add the onion soup mix to the ketchup mixture and stir together well. Add to beef and stir. Reduce heat and simmer 10-15 minutes covered. While that is simmering split French bread long ways. Spread butter on cut sides of bread. Put on a cookie sheet and put in preheated oven. Bake 3 minutes and then flip until it's lightly brown and crunchy. Watch out because it can burn fast! Remove and spread meat mixture over the bottom half of the toasted bread. Top with chopped onion, tomato and shredded lettuce, or other toppings as desired. Top with other half of the toasted French bread and cut into slices.
