Grilled Spicy Rubbed Pork Chops


First of all I would like to thank everyone who put us in their thoughts and prayers. I'm certain we'll find a way to get by. We're fortunate my husband will still be working and this is only expected to last until August. We're also fortunate to have a very low house payment, both of our vehicles are paid for, and if we get to desperate we have land we can sell. Yesterday wasn't my fondest day, but as I looked at the date I kept thinking I should be remembering something. This morning it hit me. Today is my 9th wedding anniversary and neither me or Brad remembered... my mom didn't even remember!
Since this was before the time of everyone having digital cameras, I took a picture of my picture (with my digital camera). Not the best, but it worked. This picture's one of my favorites. It was taken outside after the wedding in the church yard.
Now, on to the pork chops. Would you believe me if I told you even my picky daughter Makayla ate and loved these? Well, it's true! We all loved these pork chops. They turned out wonderful. The rub gets nice and crunchy while the inside of the meat's very tender and juicy. They're a little spicy, but not to spicy for my wimpy tongued family to love. I found this recipe at Lynda's Recipe Box and it's a keeper!

GRILLED SPICY RUBBED PORK CHOPS
1 1/2 tsp pepper
1 tsp garlic powder
1 tsp cumin
1 1/2 tsp Kosher salt
2 tsp paprika
1/2 tsp sugar
Boneless Pork Chops

Mix spices and rub onto meat. Place in a large zip loc bag and let set in the refrigerator at least 2o minutes (I let mine set about 2 hours). Grill and enjoy :)

The pork chops look yummy! I haven't made pork chops for a while. My husband likes them. I should make him some.

Happy Anniversary Heidi!!!! You were in my thoughts last night and I came over to email you and then read this post. I am so happy today is a bit brighter for you. Keep you chin up there is always a light at the end of the tunnel. Things always have a way of working themselves out somehow. You have a wonderful husband and a beautiful family you will make it. When I am down and things come up I try to remember a saying "Be happy with what you have, because someone out there doesn't have it" Works every time. (((Hugs)))

I have pork chops in the freezer just screaming to be made like these. Thanks for sharing the recipe. Also, you and your family are in my thoughts during this trying time. Both Daniel and I are worried about losing our jobs so I know a little about what you are going through. Here's hoping everything picks up for all of us!!
