Meatball Supreme

I loved these meatballs. MUCH MUCH better than the dirt tasting fish! Brad also thought the fish tasted like dirt, so it wasn't just me and my sick taste buds :) I guess I'm just not a fish person. Brad and the kids love fried catfish, but me... not so much. Everyone (except Picky Pants) ate and enjoyed these meatballs. I got the recipe out of a cookbook put together when our friend Lois turned 60. Since we live in a small town everyone knows each other, so this book was filled with great recipes from friends and family of Lois. This recipe was contributed by her neighbor Barbara. I was excited to make it because I know Barbara's a great cook. Her recipe definitely didn't let me down! They were a little tangy and down right good. What a great treat with mashed potatoes. I made these the night before and Brad put them in the oven for me so they would be done in time for dinner. They have to bake for 1 1/2 hours, but it was well worth the wait! Enjoy :)

MEATBALL SUPREME
1 1/2 lb. ground beef
1/2 cup milk
2 tsp salt
2 1/2 TBSP dry onion soup mix
1/2 tsp pepper
2 TBSP vinegar
1 cup ketchup
1/2 cup water
dash worchestershire sauce
dash tobasco sauce
3 TBSP minced onion
1/3 cup brown sugar

Mix meat, salt, onion soup mix, milk and pepper. Shape into balls. Bake at 375 for 15 minutes to brown. While browning combine remaining ingredients and bring to a boil to make sauce. Place browned meatballs in a baking dish and pour sauce over the top. Bake at 1 hour covered. Uncover and bake an additional 30 minutes.

I love meatballs, but I must've missed the dirt fish post. Oh let me give you some fresh Mississippi catfish and I'll change your mind! ;)

Those are the best kinds of cookbooks aren't they?

Your meatballs look delicious! We're actually having meatballs tonight (my husband requested the same recipe I made to bring to my sisters on the 4th), but if he hadn't already made a special trip out to get the ingredients I needed, I'd have tried these in a heartbeat! Next time I make meatballs, this will be the recipe I use :)

I hope you're feeling better!
