Easy Cake Mix Cookies.... The possibilites are endless!

I was in a hurry today and needed a quick, yummy treat for the kiddies. I had a fudge chocolate cake mix in the cabinet, but didn't want to make cake or cup cakes. I remembered the wonderful funfetti cookies I made a while back and dreamed up these cookies. The first batch I rolled into colored sugar and the second I added a handful of chocolate chunks and chopped up dark chocolate cocoa almonds. They both turned out great. Just think of all the yummy creations you could make. The possibilities are endless! Enjoy :)

EASY CAKE MIX COOKIES
1 box cake mix
1/3 cup oil
2 eggs
all the creative additions you can imagine (optional)

Preheat oven to 350. Mix cake mix, oil and eggs well. Add additions if you desire. Bake on lightly greased cookie sheet for 8-10 minutes. Let cool 2 minutes on cookie sheet before removing. Makes 2 dozen cookies.

My favorite cake mix cookies are chocolate mix with peanut butter chips..so soft and delicious! Yours look equally tempting!!

Aren't these fun and easy? I used to have a recipe like this that used Cool Whip instead of oil. The cookies won a baking contest at my company picnic one time and I just had to laugh to myself at how "unspecial" the ingredients were.

You asked me if we made it to the fair? No, not this year, but we went last year and had a lot of fun.

Once I just added yogurt to the mix instead of oil and eggs. They turned out great. I love the versatility of these.

I made those funfetti ones for the kids and we were going to do the same with other cake boxes we had as well. Good idea on throwing some other stuff in there too. They look delish.

I love a good cookie; I agree cakes and cupcakes can just be too much, so this idea is terrific. I haven't bought a cake mix in eons but will have to because I want cookies!
