Lemon Snowflake Cookies

See those yummy looking lemon cookies up there? You need to thank my 7th grade Home Economics teacher Mrs. Darby for showing me how to make them and Annie Jones for reminding me of the recipe. It's the only thing from class I remember cooking! We also sewed stuffed dinosaur-typed animals. I always had trouble sewing because I had an urge to stomp the peddle (maybe that's my problem with driving too!) These cookies are also very good with a devils food cake mix. My girls loved the lemon, but Brad says he's sick of cookies... how can you be sick of cookies?!? I think he's done gone crazy. I hope you enjoy these cookies... apparently my husband didn't (but the kids did, so he was outnumbered and therefore doesn't count).

LEMON SNOWFLAKE COOKIES
1 lemon cake mix
1 tub Cool Whip, thawed
1 egg
Powdered sugar

In large bowl, combine cake mix, egg and Cool Whip. Beat until blended. Batter will be very sticky. Drop by teaspoonfuls into small bowl of powdered sugar. Roll lightly to coat. Place on ungreased cookie sheet. Bake at 350°F for 10-12 minutes or until light brown.

I wish I could have been in your Home Ec. class! We didn't get to make cookies or sew dinosaurs, we made cran/grape jelly and sewed skirts (skin tight Jordache jeans were popular at the time, who wanted a skirt?). The cookies look wonderful!

I love how easy these are! I am going to make them this weekend.

In my junior high home ec class we had to make a button down shirt! Ugh! They all came out terrible - haha!
