Aren't these spooky little goodies adorable? Better yet, they're a much healthier choice than Halloween candy because they're meringue cookies. These cuties are light as a feather, crunchy and sweet enough to get rid of a candy graving! The recipe calls for vanilla extract, but you can play round with other flavor extracts to give them a different taste. I was in need of some holiday spirit today and thought these would be a perfect treat for me and Chase to munch on. I've been sewing Makayla's Snow White costume and after being completely fed up with the sewing machine I needed it! Sophie's going to be a box of popcorn and I have to get her costume painted. Good thing Chase chose to be a "walking pumpkin" and we already had the costume. I hope you enjoy these fun cookies :)
Here's how I normally make these cookies. If you get tired of piping bones you can always make blobs like these and say it's GASP ghost poo.
SKELETON BONES
3-4 egg whites
1 tsp white vinegar
1/2 cup sugar (or splenda)
1 tsp vanilla

Beat egg whites with vinegar until peaks form. Add sugar and vanilla; beat until stiff. Pipe onto a parchment or foil lined cookie sheet in bone shapes (or say heck with it and do blobs!). Bake at 300 30-40 minutes or until lightly brown and the centers are not wet. I sprinkled mine with a little cocoa powder to make them look dirty.
