Surprise... It's me making Saltine Toffee !!!


Here's the surprise I promised you... sorry it took so long!!! It's a cooking video of me taken for a local segment called Who's Cookin' in Sedalia. This video was taken in November. I hope you enjoy watching it. I thought this would be a way to bring you into my kitchen. I'm so thankful to everyone who follows or visits my blog and this is a way for those of you who don't personally know me to get to see my personality. It's so strange seeing myself!! I think I sound like a dork and I wish someone would have told me sooner that shirt makes me look pregnant (and I'm NOT)!! Enjoy :)


SALTINE TOFFEE
37 saltines cracker squares
1 cup butter, cubed
3/4 cup sugar
2 cups chocolate chips
1 oz white candy coating
Place crackers in a single layer in a foil-lined 15-in. x -10-in. x 1-in. baking pan. In a large saucepan, bring butter and sugar to a boil. Reduce heat; simmer, uncovered, for 5-6 minutes or until mixture is thickened and sugar is completely dissolved. Spread over crackers.Bake at 350° for 7-8 minutes or until bubbly. Sprinkle with chips. Bake 3-5 minutes longer or until chips begin to melt; spread chocolate evenly over top.In a microwave, melt white candy coating; stir until smooth. Drizzle over toffee. Chill for 15-20 minutes or until set; break into pieces. Store in the refrigerator. Yield: about 1-3/4 pounds.

Me and two of my girls were glued to the screen during your video. You're a total natural in front of the camera and I was so fascinated with the different way you made that toffee (compared to my own version).

I have made this before and it is amazing!
My kids and I loved watching you make these. :-) Simple recipe and I'm sure it's very fulfilling. I am a big fan of salt with chocolate (hello chocolate covered pretzels!)

Hope your microwave is working again, and btw - what a great attitude when the white choc wouldn't melt! :-)

I'm glad you made a mess...I think good cooks DO make messes! ;-) Great video... I love the John Deere on your stove!

This is one of my favorite candies to make at Christmas! My dad couldn't believe it had saltines in it when I finally told him!!

I haven't been brave enough to try the velveeta fudge yet...that seems too weird to me! But, I know it's one of Paula's favorites!

I made this today and I have a ? Is it suppose to be sticky on the bottom? I wanted to make sure that I made it right, It tastes good but just wondering.

Anonymous with the question- They shouldn't be sticky on the bottom. It sounds to me like the mixture didn't boil long enough before spreading it on the crackers. Did you try putting it in the fridge? Was the entire thing sticky on the bottom or just the middle?

The whole thing was sticky. I thought that it might not have boiled long enough, but i let it boil for like 6 minutes.So does it need to be thick like yours was in the video? Thank you

Yes, it should be thickened. It may have just been something as crazy as the weather. Sometimes my no bake cookies don't turn out because of the humidity level being off. You may have needed to leave it in the oven longer also.

Great video! I love this stuff. It's soo good. I actually add a touch of sea salt to the caramel to kick up the salty. I've also so made it with tortilla and graham crackers instead of the saltines. This "recipe" is awesome because it can be changed a bunch and still leave you with something addictively good.
