I love coffee... normally hot, but on this occasion cold. I drink an obscene amount of coffee. That's the only way I can handle drinking our little towns disgusting water. Don't worry, I buy jugs of water for the kiddies. I'm surprised my teeth are still white. I keep thinking one day I'll wake up to see brown teeth in the mirror. Luckily that hasn't happened yet! This iced coffee drink is so yummy it's worth the brown teeth. I hope those home teeth whitener kits work! I found this recipe on the Splenda packet box. I always figure if a recipe makes it on a product box it must be good... in this case it's wonderful! It's almost like a rich, creamy ice cream with a light coffee and chocolate flavor in the background. I'm pretty much hooked. Enjoy... I sure did :)
Here's what was cooking 1 year ago today:
These are both wonderful dishes! The pork's a quick weeknight meal hitting the table in 20 minutes and those brownies have the BEST frosting. I would recommend putting it on any of your favorite brownie recipes or even a chocolate cake or sugar cookies.
ICED MOCHA LATTE
⅔ cup SPLENDA® No Calorie Sweetener, Granulated
2 TBSP Dutch process cocoa
2 TBSP instant coffee granules
2 cups boiling water
2 cups fat free half-and-half, divided
Combine SPLENDA® Granulated Sweetener, cocoa, and coffee in a small bowl. Gradually whisk in boiling water, whisking until blended. Stir in 1 cup half and half. Pour mixture into ice cube trays. Freeze 8 hours (mine only took about 2 hours to freeze) .Pour remaining 1 cup half and half in blender. Gradually add frozen mocha cubes, blending until smooth. Serve immediately. Garnish with chocolate curls and whipped, if desired.
