Mexican Bean Dip

To My Dearest Peanut Butter Fans,

Today's a sad day. I'm not one for resolutions, but an intervention must be immediate. I (sniff, sniff) am announcing the end of my peanut butter-a-thon. I've licked one to many spoons dipped in the creamy (or chunky) stuff and now it must come to an end. Peanut Butter, my friends, is my weakness. The wonderful Peanut Butter Oatmeal Cookies did me in... I've made them at least 4 times in the past few weeks. My pants are not the ones shrinking. No amount of working out can hide my growing gut.

Ok, now I have that out of my system! I can share this yummy dip I made for New Year's Eve. I'm sure most of you already make something similar. I love it so much I even ate it for breakfast (no joke!). You know I love my taco-ish flavors. Thanks everyone who has posted their favorite recipes. Please keep posting them!! Enjoy and have a Happy New Year :)

MEXICAN BEAN DIP
1 can fat free refried bean
1 carton (16 oz) fat free sour cream
1/2 pkg. taco seasoning
shredded cheese
shredded lettuce
sliced black olives
diced tomato (I forgot to buy)
sliced green onions
tortilla chips

Spread beans into bottom of dish. Mix sour cream and taco seasoning and spread over beans. Top with lettuce, cheese, tomato, onions and black olives. Serve with chips.

I LOVE this dip!! My mom used to make it when I was a kid and we took it to every party! It's just great, like taco salad on a chip!

This looks great! And sadly, I am with you on needing an intervention. I have a whole closet of clothes that are shrinking. Bummer. A real bummer. Well, on to some fabulous healthy food recipes!

This is one of my favorites too! I don't think I've ever had it with the lettuce though. I think it sounds like a fabulous addition. Yum!

I love the idea of adding lettuce. I don't know why but shredded is my favorite way to eat lettuce. Strange I know! Good luck with the end of Peanut Butter. I had to quit myself because I was eating it by the spoonfuls right out of the jar. So I understand way too well!!

I certainly know what you mean. Peanut butter is my weakness. We made chocolate covered peanut butter balls and peanut butter sandwich cookies over Christmas, and I pigged out on them more than I should have. I guess I'll just have to start going on more walks again. Sigh. Oh well. That's what happens over the holidays. Cheers!
