It's the first day of summer vacation!!! I have so much to do, but feel like being lazy. I'm very excited I can spend more time with my kids... and blog :) Are there any Gooseberry Patch fans out there? I LOVE their cookbooks. I have a funny story about how I ended up with this Gooseberry Patch recipe. My husband and I were in Orschlen's (farm & home store). They have an amazing Gooseberry Patch cookbook display I admire every time we're in the store. I never have the extra $17 to buy one, but I love thumbing through them drooling and wishing I had extra money. I came across this recipe and wanted it. What's a girl to do? I had 2 choices. 1. I could get out some paper and write it down while people stare like I'm crazy (been there, done that) or 2. I could take out the ol' cell phone and take a picture of the recipe. I opted for number 2! My husband thought I was insane, but he sure enjoyed eating the tacos! I got a great recipe and didn't get arrested... sounds like a perfect day to me :) If you're looking for a different twist on a mild taco, you will not be disappointed. The creamed corn and cornmeal give it a sweetness and texture unlike any taco I've tried, and you know I love me some taco-ish foods and have tried a LOT. Enjoy :)
AMERICAN TACOS
2 lb. ground beef, browned and drained
8 oz. can creamed corn
8 oz. can tomato sauce
1/3 cup corn meal
2 1/4 oz. can sliced black olives (I added more because we love them)
1 cup milk
1 tsp chili powder
taco shells
taco toppings (lettuce, cheese, sour cream, taco sauce, onion...)
Combine first seven ingredients and put in greased 2 quart casserole dish. Bake 375 for 30 minutes. Spoon in shells and top with toppings.

I do that all the time in doctor's and dentist's offices with the recipes in the magazines. I've gotten some pretty strange looks before, and some great recipes!
The tacos sound interesting. We will have to try those sometime.
