Gooseberry Patch American Tacos

It's the first day of summer vacation!!! I have so much to do, but feel like being lazy. I'm very excited I can spend more time with my kids... and blog :) Are there any Gooseberry Patch fans out there? I LOVE their cookbooks. I have a funny story about how I ended up with this Gooseberry Patch recipe. My husband and I were in Orschlen's (farm & home store). They have an amazing Gooseberry Patch cookbook display I admire every time we're in the store. I never have the extra $17 to buy one, but I love thumbing through them drooling and wishing I had extra money. I came across this recipe and wanted it. What's a girl to do? I had 2 choices. 1. I could get out some paper and write it down while people stare like I'm crazy (been there, done that) or 2. I could take out the ol' cell phone and take a picture of the recipe. I opted for number 2! My husband thought I was insane, but he sure enjoyed eating the tacos! I got a great recipe and didn't get arrested... sounds like a perfect day to me :) If you're looking for a different twist on a mild taco, you will not be disappointed. The creamed corn and cornmeal give it a sweetness and texture unlike any taco I've tried, and you know I love me some taco-ish foods and have tried a LOT. Enjoy :)

AMERICAN TACOS
2 lb. ground beef, browned and drained
8 oz. can creamed corn
8 oz. can tomato sauce
1/3 cup corn meal
2 1/4 oz. can sliced black olives (I added more because we love them)
1 cup milk
1 tsp chili powder
taco shells
taco toppings (lettuce, cheese, sour cream, taco sauce, onion...)

Combine first seven ingredients and put in greased 2 quart casserole dish. Bake 375 for 30 minutes. Spoon in shells and top with toppings.

Thanks for posting this so I don't have to go to Orscheln and take a picture of it myself. LOL!

How funny!

I do that all the time in doctor's and dentist's offices with the recipes in the magazines. I've gotten some pretty strange looks before, and some great recipes!

The tacos sound interesting. We will have to try those sometime.

You know, now that bookstores have had coffee shops in them for ever, I think they know that people are taking advantage of the chance to do some free reading. :) If libraries put in coffee shops that would probably make even more sense, actually. Hmmm... they should totally do that, actually! :)

Have an Extraordinary Day!

@ Inspired Dreamer: Our local library serves free coffee and hot tea. Nothing fancy, but it's free. Also, I know of several libraries that do have coffee shops in them. I think it's a great idea!

Yummy! The kids will love these.I have to laugh, because my pretty blue cast iron pot came from a home and farm store...right next to the Gooseberry Patch recipe books (which I thumb through and drool over the recipes, wishing I had an extra $17.00 to buy the book)!

Did you make the shells on your own too? They look good, like homemade.

Will have to remember your cell phone camera trick!

I check out Gooseberry cookbooks at the library all the time. I copy what I like and then return the book. I have a 3 ring binder I but all my recipes in. I put them in sheet protectors and when I am making one I take it out of the book and it stays nice and clean.

The tacos sound great.
