I need your help. My friend's having a dinner party and everything will be served on a bamboo skewer... and when I say everything, I mean EVERYTHING! Appetizer. Salad. Main course. Dessert. EVERYTHING! Any suggestions? Her only stipulation is no seafood. That would be a tad to pricey for 20 people. I'm excited to see what you come up with :)
Here's a light summer treat I found over at Kraft. I made the filling with no crust and it was quick, easy and delicious. Kind of reminds you of a creamsicle. Enjoy :)
ORANGE DREAM CHEESECAKE
1 HONEY MAID Honey Graham, crushed (a pre-made crust would work)
2/3 cup boiling water
1 pkg. (3 oz.) JELL-O Orange Flavor Sugar Free Gelatin
1 cup Cottage Cheese
1 tub (8 oz.) PHILADELPHIA Cream Cheese
2 cups thawed COOL WHIP FREE Whipped Topping
SPRINKLE crumbs onto bottom of 8- or 9-inch springform pan sprayed with cooking spray.
ADD boiling water to gelatin mix; stir 2 min. until completely dissolved. Cool 5 min.; pour into blender (I used my magic bullet and it worked great! No lumps). Add cottage cheese and cream cheese; blend well. Pour into large bowl. Gently stir in COOL WHIP. Pour into prepared pan; smooth top.
REFRIGERATE 4 hours or until set. Remove rim of pan before serving. Refrigerate leftovers.

For dessert, how about mini cupcakes pops? Or brownie and fruit kabobs with chocolate dipping sauce? (Small cookie cutters will help you cut your ingredients into pretty shapes).

The cheesecake looks great. I ran across this type of recipe a few days ago, so I am going to have to give it a try....I love a good orange flavor.
What a cute idea, everything on skewers. A ridiculously easy thing to make is skewering grape tomatoes, drizzling them with olive oil, salt & pepper, and roasting them just until the skins split. Crazy good!
