Orange Dream Cheesecake

I need your help. My friend's having a dinner party and everything will be served on a bamboo skewer... and when I say everything, I mean EVERYTHING! Appetizer. Salad. Main course. Dessert. EVERYTHING! Any suggestions? Her only stipulation is no seafood. That would be a tad to pricey for 20 people. I'm excited to see what you come up with :)
Here's a light summer treat I found over at Kraft. I made the filling with no crust and it was quick, easy and delicious. Kind of reminds you of a creamsicle. Enjoy :)

ORANGE DREAM CHEESECAKE
1 HONEY MAID Honey Graham, crushed (a pre-made crust would work)
2/3 cup boiling water
1 pkg. (3 oz.) JELL-O Orange Flavor Sugar Free Gelatin
1 cup Cottage Cheese
1 tub (8 oz.) PHILADELPHIA Cream Cheese
2 cups thawed COOL WHIP FREE Whipped Topping


SPRINKLE crumbs onto bottom of 8- or 9-inch springform pan sprayed with cooking spray.

ADD boiling water to gelatin mix; stir 2 min. until completely dissolved. Cool 5 min.; pour into blender (I used my magic bullet and it worked great! No lumps). Add cottage cheese and cream cheese; blend well. Pour into large bowl. Gently stir in COOL WHIP. Pour into prepared pan; smooth top.

REFRIGERATE 4 hours or until set. Remove rim of pan before serving. Refrigerate leftovers.

For salad, thread cooked tortellini, grape tomatoes, mozzarella cheese, basil leaves, artichoke hearts, and mushrooms on a skewer, then toss them with your vinaigrette of choice and serve them on a bed of lettuce leaves. (A coworker did this for a party and it was delicious).

For dessert, how about mini cupcakes pops? Or brownie and fruit kabobs with chocolate dipping sauce? (Small cookie cutters will help you cut your ingredients into pretty shapes).

Your friend's dinner party sounds like a riot! I love the idea of having everything on skewers. I'm sure I could give you some ideas, but I need to know what course you're bringing.

Thread strawberries,cubes of pineapple, bananas, and cubes of angel food cake on skewers. Grill until fruit is warm and cake is golden. Place on a platter and drizzle chocolate syrup over the top of the skewers before serving. It's heavenly!!!

For a chicken dish, flatten chicken strips, thread onto skewers, marinate in Italian salad dressing and toss on the grill until done. For beef, strips of flank steak can be treated the same way. Delish!

Heidi, you are always welcome at my parties. (I might even get you to drink) so leave the kids with a sitter and make plans. Thanks for all the great ideas for recipes. I'm going to do a trial run with some of the more complicated ones(read: more than four ingredients) to make sure I get them right.

I just made grilled pork cabob with cucumber tzatziki and it was amazing. I got it off of Delectable Dining blog spot.

The cheesecake looks great. I ran across this type of recipe a few days ago, so I am going to have to give it a try....I love a good orange flavor.

Dreamsicle is my favorite flavor and I love how easy this cake is to make!

What a cute idea, everything on skewers. A ridiculously easy thing to make is skewering grape tomatoes, drizzling them with olive oil, salt & pepper, and roasting them just until the skins split. Crazy good!
