AAAAAGH! The start of school's right around the corner. August 25's the big day. Where has the summer gone? My girls have missed their friends and are ready to see them again, but aren't looking forward to homework again. I don't blame them. I miss seeing the students, but am not excited about getting up early and having to work.
I know you're probably laughing at me for posting a recipe for peanut butter and jelly, but I promise it's money saving... so don't laugh! If you're kids are like mine, they love to take pb&j's in their lunch box. I always feel better sending them one instead of lunch meat when the weather's hot so they don't have a chance of eating spoiled meat and getting sick... I don't put to much trust in lunch box coolers staying in the right place. My girls love taking those cute, round pb & j's you can buy in the freezer section, but those are ridiculously priced. My daughters say these actually taste better. The trick is a thin layer of peanut butter on each side of the bread. It cuts out having a soggy sandwich by sealing the bread from the jelly. Give it a try and save some money. Enjoy :)

peanut butter (or any nut-type butter)
jelly
Spread peanut butter lightly on two slices of bread. Spread jelly on top of the peanut butter on one slice (you know the drill) and put them together. Place in zip loc bag and freeze. Put frozen sandwich directly in lunchbox.
