Lunchbox PB & J

AAAAAGH! The start of school's right around the corner. August 25's the big day. Where has the summer gone? My girls have missed their friends and are ready to see them again, but aren't looking forward to homework again. I don't blame them. I miss seeing the students, but am not excited about getting up early and having to work.
I know you're probably laughing at me for posting a recipe for peanut butter and jelly, but I promise it's money saving... so don't laugh! If you're kids are like mine, they love to take pb&j's in their lunch box. I always feel better sending them one instead of lunch meat when the weather's hot so they don't have a chance of eating spoiled meat and getting sick... I don't put to much trust in lunch box coolers staying in the right place. My girls love taking those cute, round pb & j's you can buy in the freezer section, but those are ridiculously priced. My daughters say these actually taste better. The trick is a thin layer of peanut butter on each side of the bread. It cuts out having a soggy sandwich by sealing the bread from the jelly. Give it a try and save some money. Enjoy :)

LUNCHBOX PB & J
bread
peanut butter (or any nut-type butter)
jelly

Spread peanut butter lightly on two slices of bread. Spread jelly on top of the peanut butter on one slice (you know the drill) and put them together. Place in zip loc bag and freeze. Put frozen sandwich directly in lunchbox.

My kids take PB&J all the time. I never even thought about using the PB to prevent sogginess! Thanks for the tip!

I got a cut-and-seal from Pampered Chef and now I can make my very own PBJ circles or whatever sandwich I want. I also freeze them before placing them in the lunchboxes. Here's the link: http://www.pamperedchef.com/ordering/prod_details.tpc?prodId=33&catId=90&parentCatId=90&outletSubCat=&viewAllOutlet=.

My parents used to do this for my brother and I growing up. We would have a huge stash of frozen sandwiches in the freezer. I think I may even have one of those cut n seal things the previous person mentioned. Now that I working full-time again, this is definitely something I need to do.

To the 'other' Heidi, Thanks for the link to the cut-and-seal!! I need one, too!!! I never would have thought to make pb&j's ahead and put in the freezer!! Great idea!

I love the idea of freeze ahead PB&J! My oldest begins school in two weeks, so I'll keep this in mind.
That is such a cool idea to freeze the sandwich. I can't believe that no one has ever told me that before. Great tip!

You will LOVE your cut and seal! It is easy to use and makes the sandwiches look "professional" LOL! Seriously....who would pay $2.50 (on sale!!) for 2 PB&J sandwiches??
