Enchilada Casserole

Here's the reason for lack of posting:
The outside isn't completely done, but it looks MUCH better... at least I think so! Here's an easy dish I made for the painting crew (aka Aunt Patti, Aunt Charlotte, Bethany, Alexi & my mom and dad). Everyone said they enjoyed it. I hope you do too. Enjoy :)

1 lb ground beef
1/2 cup chopped onion
1 large can enchilada sauce
1 can (8 oz) tomato sauce
1 tsp cumin
1/2 t garlic salt
2 cups shredded colby/jack cheese
corn tortillas

Brown and drain onions and beef. Return to pan and add enchilada sauce, tomato sauce, garlic powder and cumin. Bring to a boil. Taste and season with salt and pepper. Spray a 9 x 13 baking dish. Put a layer of corn tortillas in bottom of pan. Top with 1/2 the beef mixture and 1/2 the cheese. Repeat. Bake covered at 350 for 30 minutes or until bubbly.

We have similar tastes! The casserole looks just like something we'd love at our house and your house is the same style as ours!

That does look like it would fill you up and nourish you after a long day's work.
