Enchilada Casserole


Here's the reason for lack of posting:
The outside isn't completely done, but it looks MUCH better... at least I think so! Here's an easy dish I made for the painting crew (aka Aunt Patti, Aunt Charlotte, Bethany, Alexi & my mom and dad). Everyone said they enjoyed it. I hope you do too. Enjoy :)

ENCHILADA CASSEROLE
1 lb ground beef
1/2 cup chopped onion
1 large can enchilada sauce
1 can (8 oz) tomato sauce
1 tsp cumin
1/2 t garlic salt
2 cups shredded colby/jack cheese
corn tortillas

Brown and drain onions and beef. Return to pan and add enchilada sauce, tomato sauce, garlic powder and cumin. Bring to a boil. Taste and season with salt and pepper. Spray a 9 x 13 baking dish. Put a layer of corn tortillas in bottom of pan. Top with 1/2 the beef mixture and 1/2 the cheese. Repeat. Bake covered at 350 for 30 minutes or until bubbly.
