Santa Fe Soup

I figured you might want to see the reason for lack of posting these last few months (or maybe not, but I'm still sharing :). Here are a few before and after pictures of the new house. I would like to say the before pictures are shown exactly as the previous owners lived.

Here's where I will be doing all my cooking. I hope you can understand why we changed it. I couldn't visualize myself cooking in a kitchen without counter top covering the entire cabinet surfaces and I wasn't fond of the huge burn mark in the floor!

Here's my foyer. We ripped out a wall and changed the chandelier.

This is my dining room. The previous owners had turned it into a laundry room, but I turned it back since having a place to eat would be a priority in my books :)

>Here's a yummy soup to warm you up on those cold winter days. I have several other great soups waiting to be posted. I'm normally not fan of ground turkey, but this recipe totally works it. I'm digging it. It's thick, almost chili-like and healthy to boot. You can feel good about eating this one. Enjoy :)

SANTA FE SOUP
1 lb ground turkey breast
1 large onion, chopped
1 pkg. dry ranch dressing mix
1 pkg. taco seasoning
1 can diced tomatoes (undrained)
1 can rotel tomatoes
1 can black beans, drained
1 can pinto beans, drained
1 can kidney beans, drained
1 can shoe peg corn (undrained)
1/2 - 1 cup water

Brown turkey and onion. Stir in ranch and taco seasonings. Add remaining ingredients. Heat through and serve (I let mine simmer about 30 minutes). Garnish with sour cream, cheese, jalapenos and corn or tortilla chips. It's yummy with corn bread also.

Your place looks WONDERFUL!!!! We almost bought a fixer upper this last time round, but it didn't work out....kinda glad cause the place we did buy we just had to paint the walls and new carpet...much easier than knocking down walls! But it does give you a sense of accomplishment when things are finally done.

Your house looks beautiful--you can tell you guys have put a lot of work into it, but I'm sure it has been very rewarding!

The soup looks great and perfect for this cold weather! My husband loves all types of beans, so he'll be ecstatic!
