See this delicious cheesecake??? Would you believe me if I told you it was only 5 ingredients (only 3 for the filling!) and easy enough for a 9 year old to prepare? Believe it or not, it's a FACT! Makayla's been having some anxiety issues since moving and to keep her mind off worrying I've been having her scour old Taste of Home magazines for recipes she wants to cook. This recipe was first on the list. Next she'll be preparing pizza out of Texas toast. Not only was this recipe delicious, it was fast and easy. We had a laugh when she turned on the mixer and powdered sugar flew everywhere! Needless to say, the LOW speed on my mixer is far from low! Enjoy :)

CHERRY CHEESECAKE
2 packages (one 8 ounces, one 3 ounces) cream cheese, softened
1 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed
1 shortbread or graham cracker crust (8 or 9 inches)
1 can (21 ounces) cherry pie filling
In a bowl, beat the cream cheese and sugar until smooth. Fold in whipped topping; spoon into crust. Top with pie filling. Refrigerate until serving.

Yes, you can make this dessert lighter (I did) by using 1/3 fat cream cheese (I wouldn't use the fat free) and fat free cool whip. They also have a no sugar added version of the canned cherry pie filling and you could also use a powdered sugar substitute you make by placing 1 cup granular Splenda and 1/2 TBSP cornstarch in a blender and whipping until the mixture is light and resembles powdered sugar (that makes 1/4 cup of the substitute)
