BBQ Pork Chops (Skillet or Grill)

These pork chops are YUMMY! Super-D-Duper Yummy.  Moist.  Tender. You need to make them ASAP!  I snagged the recipe from My Tasty Treasures, but tweaked it a little since I couldn't bring myself to cooking them in a skillet with a perfectly good grill sitting on the back deck.  I will use the skillet method this winter when it's below freezing and grilling is out of the question.  Why?  Because.  Everything tastes better on the grill!  Enjoy :)

BBQ Pork Chops
3/4 cup BBQ sauce
2 TBSP cider vinegar
3 TBSP Brown Sugar
1 TBSP paprika
1/2 tsp cumin
1/2 tsp salt
1/2 tsp pepper
1/4 tsp cayenne pepper
4-6 bone in center cut or rib chops 3/4-1 inch thick
1 TBSP oil (for skillet method)

Whisk BBQ sauce and vinegar.  Combine spices and whisk 1 tsp into the BBQ sauce a vinegar mixture.  Pat chops with paper towels and rub with remaining spice mixture.

GRILL METHOD
Grill and brush with sauce until meat is no longer pink (I don't know the exact amount of time because I am banned from the grill since the starting-it-on-fire incident).  Eat.  Yum!

SKILLET METHOD
Heat oil until smoking.  Cook chops until well browned (4 minutes per side).  Reduce to medium low and brush with sauce.  Flip and cook to caramelize (about 1 minute).  Brush and flip and cook the other side until it reaches 145.

They look wonderful. I don't like to dirty my stove so I use the burner on my grill and my trusty cast iron skillet. Will try these soon. I'm a porkoholic.

I tried this. The flavor is good. However 4 minutes on each side is too much. I will try 3 minutes next time.
