Pineapple Cake with Cream Cheese Icing

Looking for a delicious summery cake?  This pineapple cake screams creamy, summer goodness with it's tangy pineapple and lusciously smooth icing.  It's won't last long on the dessert table at your next pot luck or BBQ!  You may take one bite and decided not share at all :) This description's making me want to bake another one ASAP!  Enjoy :)

PINEAPPLE CAKE
2 cups sugar
2 cups flour
2 eggs
1 can crushed pineapple with juice
2 tsp baking soda
1/4 tsp salt
1 tsp vanilla

Mix all cake ingredients together and put in a greased sheet cake pan. Bake at 350 for 40 minutes or until golden and not wet to the touch. Ice when cooled.

ICING
8 oz. cream cheese
1 tsp vanilla
2 cups powdered sugar
1/2 stick melted butter
nuts (optional)

Beat until smooth. Spread on cooled cake. Sprinkle with nuts if desired (Pecans are yummy).

As a child, I loved this cake when my mother made it. It was my favorite. But then she lost the recipe and I was heartbroken. Imagine my surprise and happiness when 40 years later I saw it on Pinterest, thanks to you. The first time I made it, I wasn’t sure it was the same until I tasted it.
