Fat Free Cheesecake Stuffed Strawberries

You see these strawberries? They're absolutely AMAZING... and they're fat free! This is one of those recipes you MUST try. Melody posted it last week on her blog Cheat Day Cafe, and I was drooling all over myself. They taste even better than they look too. The filling is light, smooth, and creamy. I'm going to make it again, but put the filling in a graham cracker crust and cover the top with sliced strawberries. My kids went bonkers over this. It really is that good. You can also feel good about yourself while eating these. No junk-in-the-trunk will come from these little fat free babies, so enjoy :)

FAT FREE CHEESECAKE STUFFED STRAWBERRIES
18-20 large strawberries
1.4 oz. package of sugar free, fat free Cheesecake pudding
8 oz. fat free whipped topping, thawed
1 cup of skim milk

Mix the pudding and skim milk together with a whisk for 2 minutes. Fold in whipped topping. Place in refrigerator for 15 minutes.Wash strawberries and cut off stems. Let strawberries dry on a paper towel on the cut end. With a sharp knife cut the strawberry as shown in the picture.

Put filling in a large zip loc bag and cut the end off (or pastry bag if you have one). Put tip in strawberry and squeeze filling until it comes out of the sides and top of the strawberry. Store loosely covered in the fridge.

a cube of butter is just a stick of butter. I'm pretty sure it measures out to be a 1/2 cup. hope that helps!

When I saw this pic I wasn't sure I would try them, but seeing as it's cream cheese pudding, I'm all over this idea. FL is the winter strawberry capital of the south (at least that's what they tell us :)). So this will be a 'must make' during strawberry season!

Yummy!!! I make something similar, but I hollow out the strawberry and fill with dark chocolate and then bake them. They come out and they are hot and ohh so yummy. I top off with whip cream and enjoy!!! You have to try it sometime.
