Soft Chocolate Chip Cookies


Saturday my little town held its' annual Easter Egg Hunt sponsored by The Little Village Club. Since I'm the Vice-President and Secretary of the club I had to hide Easter eggs and then I was in charge of getting the 0-3 age group and the 4-5 age group where they needed to go. We had between 50 and 75 kids hunting this year and it was a little crazy because it was so windy people couldn't hear us yelling to divide the kids into their groups. In the end, it worked out fine... I was glad when it was over! Now to the food part. Everyone in the club had to bring a few dozen cookies for the kiddies to nibble on while we were counting their eggs and giving out treat sacks and prizes. I brought these awesome chocolate chip cookies. If you have never made the chocolate chip cookies using the pudding mix you must try it soon. LIKE TODAY!! You won't regret it. They were unbelievably good. I have found the recipe on several blogs and decided it must be good after reading the rave reviews. I was not disappointed. These cookies are soft, but not cakey, and very moist and delicious.

SOFT CHOCOLATE CHIP COOKIES
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1 cup butter, softened
3/4 cup packed brown sugar
1/4 cup white sugar
1 (3.4 ounce) package instant vanilla pudding mix
2 eggs
1 teaspoon vanilla extract
2 cups semisweet chocolate chips

Preheat oven to 350 degrees. Sift together the flour and baking soda, set aside.
In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown. Makes 4 dozen

These look fantastic! I'm going to have to make them soon, even though Justin doesn't like chocolate...silly boy. But guess what we're having for dinner tonight? Your marinated baked pork chops! Teresa, Netts Nook, Rachel- The pudding gives these cookies a great flavor. You can use any kind of pudding you like, you don't just have to use vanilla.

Melody- They're making me hungry for chocolate too! They're already gone :(

jjnhubbs- Justin doesn't like chocolate? He's crazy! I actually didn't like it until I was pregnant with Sophie. She ruined me. Now I love it. I'm so glad you enjoy my blog. I'm getting ready to try another marinated pork chops recipe, so keep your eyes open in the next few days. I hope you, Justin, and that sweet little girl are doing well. I miss all my old Staples friends :(
