Today's field day at school so Makayla had to bring snacks. Tomorrow's only a half day (and the last day of school), so today they get to play games all morning and then watch a movie in the afternoon. I didn't have any yummy goodies to send so I decided to whip up a batch of these. Makayla's a peanut butter fan and was thrilled... any way to get junk food makes her happy! Everyone really liked these filling bars. They're thick like cake, but the texture isn't cake-like. I would describe it more as having a soft cookie type texture. These bars are also not as sweet as some of the treats I have made, so that's also a big plus. This is definitely a keeper!
PEANUT BUTTER CAKE BARS
2/3 cup butter, softened
2/3 cup peanut butter
1 cup sugar
1 cup brown sugar
4 eggs
2 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 package (11-1/2 ounces) milk chocolate chips
In a large bowl, cream the butter, peanut butter, sugar and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture. Stir in chocolate chips. Spread into a greased 13-in. x 9-in. baking pan. Bake at 350° for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut into bars.
