Holey Moley these are yummy! I have an entire pan of these babies setting right in front of me now. Wouldn't you like to be visiting me today? I found this recipe in the newest version of Simple and Delicious magazine by Taste of Home. It's by far my favorite magazine and where I get a lot of new recipes. I received this issue several weeks ago and I think it's the best issue they've had in several months. I usually like the summer issues better than the winter ones for some reason. I found at least a dozen recipes I want to make. I picked 4 recipes to make this week. I've already made two. Keep your eyes peeled for the turkey wraps I made a few nights ago... they were awesome too. These toffee bars are very easy to make. I can't keeps Chase's hands out of the pan! I often have food pictures with a little sneaky hand in them. I should post them because they're too funny! Enjoy :)
TOFFEE BARS
Crust
1 cup all-purpose flour
3/4 cup brown sugar
1/2 cup cold butter
Topping
1 egg
1 cup brown sugar
1 tsp vanilla extract
1 tsp baking powder
1 cup flaked coconut
1/2 cup chopped pecans or walnuts
In a large bowl, combine flour and brown sugar. Cut in butter until crumbly. Press into an ungreased 13-in. x 9-in. baking pan. Bake at 350° for 8-10 minutes or until golden brown; cool slightly. In a small bowl, beat the egg, brown sugar, vanilla and baking powder until blended. Stir in coconut and pecans. Spread over crust. Bake for 12-15 minutes or until golden brown. Cool on a wire rack. Cut into bars.
