kids had a great time playing and watching the people fish in the pond. We will definitely be going back for another picnic! When we got home the kids played in the sprinkler and I baked these cupcakes I've been eyeing over at Mommy's Kitchen. Tina always has such great recipes and this was no exception. My peanut butter loving family thought these were great. My Aunt Connie took 2 of them home with her and called from her cell phone to tell me she loved them and didn't think she could wait to eat the next one. She even thought of licking the crumbs from her shirt... that may be a little hard to explain if she got pulled over for swerving :) I'm glad everyone enjoyed them, but even gladder I'm off work til Monday! YAY!

PEANUT BUTTER CUPCAKES WITH PEANUT BUTTER FROSTING
Cupcakes
2/3 cup shortening
1 1/2 cups granulated sugar
3 eggs
1 cup creamy peanut butter
3/4 cup milk
1 tsp vanilla extract
2 tsp baking powder
1 3/4 cups all purpose flour
Frosting
Frosting
1 16oz box (1lb) powdered sugar
1 stick margarine, softened
1/2 cup creamy peanut butter
1 tsp vanilla extract
3-4 TBSP milk
Cream shortening and sugar together. Add eggs and beat well. Add peanut butter and beat well. Add milk and vanilla extract alternately with the baking powder and flour. Fill the muffing liners about 3/4 full with batter(Tina says to use an icecream scooper). Bake for 20 -25 minutes or until golden brown and a toothpick inserted comes out clean. Cool cupcakes completely on a wire rack and frost with peanut butter frosting. To make frosting cream powdered sugar and margarine together, add peanut butter. Mix well, add vanilla extract and enough milk to make it easy enough to spread. Beat mixture together until you have the consistency you want. Frost cupcakes when completely cooled.
