Mini Corny Dogs

Guess what? I made it to the finals! The cook-off to win the $1000 grocery card will be Tuesday at 6:30. I'm so excited. Thank you, thank you, thank you to everyone who vote for me. I hope my crock pot nacho supreme can hold up to the competition. This is the very first cooking contest I've ever entered and I'm already starting to get nervous. Keep your fingers crossed for me.
I would like to announce the winner of the Simple & Delicious magazine. Congratulations to Koopermom!!! I think it's one of the best S & D magazines Taste of Home has put out this year. If you remember it's the one I found 13 recipes I wanted to try including the mozzarella sticks and picante beef roast. I didn't get the recipe for these yummy mini corn dogs from the magazine, but another source I use often... Mommy's Kitchen! Tina always has great recipes. I modified her corny dog recipe to make the mini corny dogs. My family really enjoyed these! They're much better than the frozen boxed kind. Thanks Tina!

MINI CORNY DOGS
1cup buttermilk
2 medium eggs
1/4 cup oil
2 TBSP sugar
1 tsp salt
2 tsp baking powder
1 1/3 cups corn meal
2/3 cup flour
1 to 1-1/2 pounds hot dogs cut in 4 pieces each
flour for dusting (about 1/2 cup)
oil to fry

In a large bowl combine buttermilk, eggs, oil, sugar and salt. Mix well. Sprinkle in baking powder, corn meal and flour. Stir to make a slightly thick batter. Dry off hot dogs on paper towels. Dust the hot dogs with flour, coating them completely. The cornmeal batter won’t stick to the hot dogs unless they are coated in flour. Set the hot dogs aside. Heat oil to 375°. Allow the oil to preheat so it is almost smoking by the time you are ready to add the corn dogs. Using a toothpick, dip floured dogs into batter. Shake excess off and quickly place the battered dog into the hot oil. Only fry a few corn dogs at a time. If the corn dogs crowd each other they don’t fry very well. Turn the corn dogs when the bottom side is well browned. Use tongs to remove dogs and drain on paper towels. Repeat the process, coating and frying a few at a time, until all of the corn dogs are cooked.

So glad you liked the corn dogs, that is carsons favorite recipe. Congrats on making it to the finals what contest is it? is it locally in your city or online?

These mini corn dogs are so cute. My kids would gobble them right up!
Let me just say that I have an addiction to mini corn dogs. I CAN'T keep them in the house. I only buy them if I know we have enough kids hanging out to eat all of them.
