I need cookies, lots of cookies, to brighten my day. I thought Spring had sprung, but he had a mean trick for us here in Missouri. Yesterday was almost 70 degrees. My girls wore shorts to school with a light jacket.... then this morning we woke up to freezing temperatures and snow covering the ground with lots more snow predicted for this evening :( I want warm weather and sunshine! How are we suppose to pour a basement when the weather is so wet? How depressing. At least I have some tasty cookies to keep me company. Hmm.... is that a good or a bad thing?! As delicious as these are they will probably add a smile to my face and a few inches to my butt. Enjoy :)
COWGIRL COOKIES
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 tsp vanilla extract
2 cups rolled oats
1 cup m&m's (I used the Valentines mix I bought on sale)
1 Hershey's bar grated
Preheat oven to 350. Grease baking sheets. Sift together the flour, baking powder, baking soda, and salt. Set aside. In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually stir in the sifted ingredients. Stir in the rolled oats, grated chocolate and m&m's. Drop by rounded teaspoonfuls onto the prepared baking sheets. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheets for 5 minutes before removing.
