HEALTHY ALERT! HEALTHY ALERT! I'm being all healthy again :) These filling little muffins are actually pretty delicious and low on the glycemic index. They're in fact so delicious I've had trouble stopping with just one.
WARNING: If you're like me and find yourselfdevouring nibbling yourself through 4 or 5 or 6 2 or 3 you might want to make sure you're going to be close to the toilet powder room because these fiber filled sweeties have a tendency to make themselves be known (lets cut the crap... they keep you regular :). With that said... you should try these. They're a yummy way to eat some healthy whole grains and hit your daily fiber quota. Enjoy :)
APPLE BRAN MUFFINS
3/4 cup wheat bran cereal (bran buds)
1 cup skim milk
2/3 cup whole wheat flour
1/3 cup Splenda
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 1/2 tsp cinnamon
1/2 cup oat bran
2/3 cup raisins
1 large apple, peeled and cut into 1/4 inch cubes
1 egg, slightly beaten
2 TBSP canola oil
1/2 cup unsweetened applesauce
Preheat oven to 350. Spray muffin tin or use baking cups (for 12 muffins). Mix wheat bran cereal and milk in bowl and let stand at least 5 minutes. In large bowl, mix flour, splenda, baking powder, baking soda, salt and cinnamon. Stir in oat bran, raisins, and apple. In small bowl, combine egg, oil and applesauce. Stir, along with cereal mixture, into dry ingredients. Spoon into prepared muffin tin and bake 20 minutes or until lightly browned.
