My Aunt Connie has been making this AMAZING salad for as long as I can remember. If she came to a family gathering without this salad I think people would throw rocks at her and tell her to leave and not come back until she had made it. You think I'm joking, but we have a huge family (my grandma has 11 living children plus all their kids and grand kids and great-grand kids and step kids and spouses.... our family reunions and Christmas dinner can have well over 100 people if everyone shows up). I don't think I would be wrong to say there are actually family members who show up to the dinners just to eat this salad. Aunt Connie's kids are grown with families of their own, and she's single (and looking for a rich, handsome man), so she doesn't cook as often any more. When she does cook, she makes amazing things like this cheese salad. I will never forget Connie cooking my very favorite rum cake for my birthday. I could eat the whole thing, but sometimes took it to school and shared it (ya, I took rum cake to school... it's not like I was drinking the rum from the bottle). Aunt Connie also made Eggs in a Basket with me on Sunday mornings. So, today's your lucky day. I'm going to let the cat out of the bag and share this recipe with all you. Seriously, you must try this salad. IT'S AMAZING!!!
Mix cheeses, tomato and olives in a large bowl. In small bowl combine miracle whip, Dijon mustard, cayenne and Mrs. Dash. Pour onto cheese mixture and mix well to coat.
This is me and Aunt Connie at Grandma's for Easter dinner. I love the way she makes me look tall and I'm only 5'3 :)
CONNIE'S FAMOUS SPICY CHEESE SALAD
1 lb block colby/jack cheese cut in 1/2 inch cubes
1 lb block colby/jack cheese cut in 1/2 inch cubes
1 lb block pepper jack cheese cut in 1/2 inch cubes
3 medium tomatoes, chopped
1/2 jar green olives, sliced in 1/2
1/2 cup miracle whip
1 TBSP Dijon mustard
1/2 tsp original Mrs. Dash
1/8 tsp cayenne

This salad sounds amazing!!! I've NEVER heard of cheese salad before. Our family is huge cheese lovers - I'm gonna have try this for sure!!! Bookmarking now... Do you eat it with crackers?
Kathy- This salad is served just like you would a potato salad or cole slaw. It is a pretty thick salad, but once it sets it gets wetter because the tomato breaks down. I wouldn't make it the night before you want to serve it. It still would taste good, but would be thinner than it should be.
