Don't these cookies look irresistable? I found this recipe on the butter flavored crisco container and they named it well. I know we haven't been able to resist them! I hope this posts ok. IRRESISTABLE PEANUT BUTTER COOKIES
3/4 cup creamy peanut butter
1/2 stick (or 1/2 cup) butter flavor crisco shortening
1 1/4 cups firmly packed brown sugar
3 TBSP milk
1 TBSP vanilla
1 large egg
1 3/4 cups flour
3/4 tsp baking soda
3/4 tsp salt
1/4 cup white sugar (to roll in)
Heat oven to 375. Combine peanut butter, shortening, brown sugar, milk and vanilla in large bowl. Beat at medium speed with electric mixer until well blended. Add egg. Beat until just blended. Combine flour, baking soda and salt. Add to creamed mixture at low speed. Mix until just blended. Make into meatball sized balls. Roll in white sugar. Place on greased baking sheet. Flatten slightly in a crisscross pattern with fork. Bake for 7 - 8 minutes or until set and beginning to brown. Cool 2 minutes before removing from baking sheet.

The cookies look delicious. Peanut butter is my hubby's favorite so I'm sure we'll be trying these out!

I have the Hillbilly Housewife's emergency menu and shopping list in a binder. I use them when things get tight. Have you seen them? I have also made a lot of her recipes and they are tasty and economical. I think I read that you liked her also.

As for "economical" recipes, I've got quite a few--I'm always trying to be as careful as possible, especially b/c up until recently, we were relying almost exclusively on my husband's income. Let me gather a list and I'll get back to you :)
