Go-To Favorites Part 2

I've finally got part 2 of my Go-To Favorites ready to be posted. I've had a lot of fun putting these posts together and would like to thank everyone who participated. Click here if you missed part one.

Lara at Recipe Shoebox has a few stand-by's she loves and has been making for years. She says this Famous Tortilla Chicken Soup's her longest standing go-to meal and, "it's super fast to make when you use pre-cooked chicken and it's one that everyone in our family will eat."

Another great go-to meal comes from Katherine at Smoky Mountain Cafe. This Smoky Mountain Spaghetti's much different than your typical spaghetti. Katherine says her family, "loves pasta and this is a quick and easy meal and a nice change from traditional spaghetti."

Coleen from Coleen's Recipes loves Cuban Rice & Black Beans. She calls it "perfect food" because, "it's filling, full of flavor, low fat and is ready in a blink." She also describes the flavor as being, "savory with just a hint of spice."

Try these Double Duty Meatball and Sauce from This Stop Willoughby.

1 cup sour cream
2 eggs
1 envelope dry onion soup mix
1 teaspoon garlic powder
1 teaspoon fresh ground black pepper
5 pounds ground beef
1 cup bread crumbs
6 cups spaghetti sauce

Preheat oven to 350 degrees. In a medium bowl, mix sour cream, eggs, dry onion soup mix, garlic powder and black pepper. Place ground beef in a very large bowl and pour sour cream mixture and bread crumbs over the top. Using your hands or a sturdy wooden spoon, mix until well blended. Roll meat mixture into meatballs the size of small golf balls. Place on baking sheet and bake in preheated oven until just browned (you could brown them on the stovetop if you prefer). Place browned meatballs in crockpot and cover with sauce. Set crockpot on low and cook for 6 hours. Serve over pasta for classic spaghetti and meatballs or on toasted sub buns with mozzarella cheese for meatball subs. Store leftovers in a covered, oven safe casserole dish. To reheat, preheat oven to 350 degrees. Place casserole dish directly from refrigerator to oven and bake for 30 minutes or until heated through.



Don't think I forgot my favorite go-to meal. Here are three tried-and-true favorites at my house. I find myself going back to these great recipes over and over. The BBQ Beef Patties are quick, moist and delicious. The Guiltless Fries are so good my kids actually prefer them to frozen or restaurant ones... and last but not least, these Peanut Butter Chewies are always a hit at home or anywhere I need to bring a little something!
