Coconut Dream Bar

Oh my yummy, gooey goodness these are one of my favorites! I discovered the recipe on the back of a flaked coconut bag while pregnant with Picky Pants. I was craving something sweet, so I whipped up a batch of these bad boys... only I thought they really were bad on first taste! I cut myself a huge piece while still warm out of the oven and wasn't impressed. I covered them with foil thinking Brad may like one after he got home from working the night shift. I left for work in the morning before he got home, but when I arrived after work I was surprised to see almost the entire pan had been eaten. Brad raved about how great they were. Being pregnant and always hungry I decided to give them one last try and boy am I glad I did... my butt wasn't glad though because I ended up gaining 80 pounds :) Needless to say they were AWESOME!!! After setting overnight these bars resembled the texture of a pecan pie. I've made them many times since remembering they need to set overnight before being eaten, so plan in advance when making these. Something magic happens to them overnight and if you like coconut you won't be disappointed. Enjoy :)


Here's what was cooking 1 year ago:





COCONUT DREAM BARS
1 1/2 cups flour
2 cups packed brown sugar
1/2 cup butter
3 eggs
1 tsp baking powder
1 tsp vanilla
1/4 tsp salt
1 1/2 cups sweetened flake coconut

Preheat oven to 350. Combine flour, 1/2 cup brown sugar and butter until particles are fine; use low speed of mixer. Press into bottom of ungreased 9x13 pan. Bake 15 minutes. Beat 1 1/2 cups brown sugar with eggs just until blended. Mix in remaining ingredients. Spread over partially baked crust. Bake 20-25 minutes or until golden brown. When cold, cut with sharp knife.

I've had the same thing happen to me before. Sometimes things are better the next day! They look delicious.
If they are similar to pecan pie, they've got to be yummy! We love cocnut, so I'll have to try these.

I've never been a huge coconut fan (except for 7-layer bars), but your picture is making me think that I might want to reconsider :) My husband, on the otherhand, loves coconut, so he'll definitely love these!

I have been eating so much coconut lately. These bars look awesome!

The other day my mom started telling me about this dessert with saltine crackers and chocolate that she ate at church and I told her that I knew exactly what she was talking about. I told her about your fun video! :)
