Remember those yummy crock pot burritos I posted a few weeks ago? I loved the easy and inexpensive filling and received many great comments and emails from you guys. I even saw them posted with great reviews on several blogs. I loved the fact I had a great big bag full of the meat and bean mixture in my freezer, but wanted to use it in another way. I spoke with a friend (who's a follower too, Hi Trina!) who came up with the great idea of using the leftover filling to make nachos. We both agreed these were even better than the burritos! If you made the burritos and have a bag of the filling leftover in the freezer you must defrost it ASAP and make these nachos. If you haven't tried this great crock pot filling you must! It really is great and a LOT cheaper than buying nachos at Taco Bell! I hope you try this recipe soon. Enjoy :)

CROCK POT NACHO SUPREME AND A WINNER
filling
1 lb ground beef, cooked and drained
2 cans refried beans
1 can (8 oz) tomato sauce
1 pkg. taco seasoning (I use low sodium)
1/2-3/4 cup water
tortilla chips
1 can (15 oz) nacho cheddar cheese sauce with jalapeno peppers
topping of choice (lettuce, tomato, sour cream, black olives)
Mix all filling ingredients in crock pot. Cook on low 6 - 10 hours. Serve over chips topped with warmed cheese sauce and toppings of choice.

This was so good! It was like eating fast food but healthy! I made my own fat free re-fried beans and my own low fat cheese sauce to go over the top. I also made the tortilla chips from low carb tortillas I had and I always make my own taco seasonings so it doesn't have sugar or MSG. LOL
