Shoebox Taco Salad

Hello and welcome to Taco Salad Corner. This is your host Heidi and I have yet ANOTHER taco salad dish to share with you today!!! What's with all the taco salad-ish recipes I've been posting? What can I say... we enjoy the flavor of tacos. In the past few months I have posted Soft Taco Burgers, Mini Fajita Salad Bites, Brown Bag Burritos, Taco Joes, Frito Fiesta Salad, Taco Salad, Beef Taco Skillet, Crunchy Burritos, Enchiladas El Paso, Blue-Ribbon Beef Nachos, Brad's Burrito Bake and Pinto Bean Casserole. Some of these recipes many of you probably don't remember, or simply didn't visit my site yet. While all of them were very good, if you're looking for the most tried-and-true you must go back and click the Blue-Ribbon Beef Nachos. I've been making them for many years and they're always and tasty treat. I do believe they're going on the menu for next week because we haven't had them in a while. They sound good :) Brad's Burrito Bake's also sounding very yummy right now. Choices... so many yummy taco-flavored choices. Speaking of choices, Shoebox Taco Salad's a great one too. I stumbled upon Recipe Shoebox a few weeks ago and have already made several great recipes from the site. If you haven't already, click on over and visit Lara and her yummy recipes. I chose this recipe because it's similar to one of Brads all-time favorites, Taco Pasta Salad. I will post the recipe for it soon. Enjoy all the taco-y goodness :)

SHOEBOX TACO SALAD
1 lb. ground beef or turkey
1 - 1 1/2 packets of taco seasoning (depending on how spicy you like it)
1 diced onion
1 can black bean, rinsed and drained
1 cup Catalina dressing
Chopped lettuce
Tortilla chips (Doritos or corn chips work well too)
Topping of your choice (tomato, sour cream, shredded cheese, guacamole, green peppers)

Brown meat with onion and drain. Add 3/4 cup water and taco seasoning. Simmer 5 minutes. Add beans and dressing to desired consistency (Start with 1/2 cup and then add more if needed). Taste to see if you need more seasoning. Simmer 5-10 minutes, stirring occasionally. Serve with lettuce, chips and toppings.

We love Taco Salad at our house! I grew up on it too! This looks like a great recipe for it!

I am trying to think of a good Cinco de Mayo recipe to post but today I am going Jamaican!

You certainly have been on a "Mexican Food Kick"! This sounds great! I've never tried a more traditional taco salad!
I think this variation sounds wonderful! Keep 'em coming! The ones you have been posting are all keepers! :)

(Just a quick laugh... I had my volume up when opening your page this morning. "If I Knew You Were Coming..." was playing and it switched to a different song when I looked at an older post. My son (2 years old) comes running up to me yelling, "Mama, no! I want the bake a cake song back!" Apparently he's a fan! :) )

I like taco salad and I don't make it very often. I think that needs to change. I do admit to that the catalina dressing sounds kind of strange in this though.

How embarrassing that I just stumbled across this now. This is one of our absolute favorite dinners. It's one of the few that the whole family gets excited about! I'm glad you liked it too. :)

You can also do "walking taco's". Simply get the snack sized bags of doritos or fritos, crunch the chips a bit and add all the ingredients and a fork. It's awesome on the go. Hence the name Walking Taco...get it, get it? Ok, I'm a dork but I love these.
